Last week I was finally able to stop by Memphis Championship Barbecue while I was in Las Vegas for a conference. Amy Mills recommended I stop by the Warm Springs location as it was closest to the strip (I have maps below to all three locations). For those not familiar with Memphis Championship Barbecue, they are owned by what comes close to BBQ royalty, Mike Mills and his daughter Amy (they also own three locations of 17th Street Bar and Grill in Murphysboro, Fallon, Marion, and Sparta Illinois).
My expectations were high because of the clout these two carried, but after the moment we (me and two business colleagues) stepped foot into the restaurant, we were welcomed like family (cheesy to say, but more than true) and the overall meal was much better than I even thought it would be. Our waiter started us out with a sampler appetizer plate which consisted of pulled pork potato skins (insane), deep fried pickles (just goodness through and through), fried onion strings, and smoked chicken wings (never had them this way, but will order them again for sure).
I ordered the three meat plate as I needed to try their brisket (moist and not overcooked in the least), the pulled pork (devoured it), and the baby back ribs (which came highly recommended and lived up to it big time). All three were delicious and the beans were seriously some of the best I’ve ever had.

Their BBQ sauce is not too heavy and definitely leaned towards a memphis flavor. I of course had to sprinkle on some additional Magic Dust even though I knew it was a big part of the cooking process anyways.
So next time you’re in Vegas you have to skip the buffets, avoid the overpriced celebrity strip restaurants, and head over to any of the Memphis Championship Barbecue locations. You won’t be disappointed.
