Hill Country Barbecue Market – Washington DC – New BBQ Joint

I have friends (BBQ addicts and others) who tell me Hill Country Barbecue Market in New York is the best Texas BBQ outside of Texas. I do know they take their barbecue very seriously and from their website they say, “Taking a ‘cue’ from legendary barbecue establishment Kreuz Market and it’s distinctive, dry-rub style, Hill Country’s brisket, sausage, ribs, and other meats are smoked low and slow over Texas post oak. The barbecue is served in butcher paper, counter-style by the pound, with traditional trimmings.”

Hill Country Barbecue Market DC, their second establishment, opened to the public Saturday March 11th. You can read additional information from here.

  1. Food was good, mac-n-cheese was really good. However, charging 2 bucks for a soda refill and completely filling the glass with ice on the refill, leaving me a 4 ounce refill was completely unnecessary. Come on’ guys, don’t make your profits on soda, you were selling lots of meat and sides….
