Meyer’s Elgin Smokehouse – Brisket, Sausage, Sauces, and Seasoning Giveway

There’s something special about going to Meyer’s Elgin Smokehouse in Elgin, Texas. Maybe it’s the history or perhaps it’s the amazing Meyer family that is so welcoming each time you visit or more than likely it’s the fact that Meyer’s has been making great BBQ (especially high quality sausage) for over 75 years over four generations. I’d say it’s a combination of the there, but one thing I do know is that I am extremely lucky to be able to have them team up for an amazing giveaway.

Back to basics, I’d say my favorite ingredient in sausage is pork! I know makers do a lot of beef, but sausage to me is pork.

  11. Scott,

No fennel seed in our sausage. All ours are based on German farm style (coarse ground) sausage my great grandfather learned how to make before he emmigrated to America in 1880s.

  40. Definitely GARLIC in the sausage. I am a garlic fanatic!

    Comment by Tabitha — April 30, 2011 @ 4:04 pm

  41. I’m all about the pork flavor. I can’t handle all the spices so the original recipe would be great for me.
My BF loves the spice so he’d choose: Tejano – All pork sausage, seasoned with authentic chorizo seasoning and jalapenos. This is a truly unique Tex-Mex flavor.

I guess you could say, when it comes to spice, I’m a ‘weeny’!
