Additional Photos – Saturday BBQ with John Mueller

Heading out to Austin to do some work at the BBQ joint location, but wanted to give you some more photos from our BBQ yesterday. Even though John wasn’t 100% pleased with the brisket the rest of us ate until we stuffed ourselves and enjoyed it thoroughly.

These first three shots are of John’s neighbor Ernie’s appetizer which consisted of large jalapenos stuffed with cream cheese and little smokies then wrapped with bacon:

Off to the right is a breakfast sausage that mysteriously disappeared after the peppers left the smoker:

The finished peppers:

Here are some additional shots of the briskets and pork shoulders on the smoker:

Note the butcher paper beneath the meat to keep the bottom from burning:

Here is one of the briskets resting on the cutting board:

  2. “chunk of brisket I ripped off from an end”

OMG, that photo is so disgusting I’m about to vomit.

That piece of fat and gristle should have ended up in the trash, not somebody’s mouth. And most of the meat in the serving tray doesn’t look much better.

Looks like an amateur backyard cookout to me.

    Ciao, JR

  3. JR must be from the Carolina’s. We do BEEF here in Texas, son. BEEF. With occasional forays into hog.

It’s well known that you can’t steal a pig & ride a horse @ the same time.

  4. @NCAA: Actually JR lives in SoCal but is FROM Central TX and I know GOOD brisket when I see it and that pile of point end unrendered fat in the photo aint it. Like I said, looks like below avg. amateur backyard cook out grub to me. Maybe it was the kids first try. Anybody named Mueller would certainly not sell that piece.
