I had the extreme pleasure while on a trip to Florida to stop in Salisbury North Carolina to sample some great BBQ with a friend that I had talked with for a long time via the Internet and met in person while on my trip.
She suggested that we go to a local BBQ Joint called Winks "King of Barbecue" which had a big lion on its sign, not something you would expect at a BBQ Joint to be sure.
In this region the big BBQ item has got to be Chopped Pork, not pulled,. We bought it by the plate and had Buns on the side so that we could make our own sandwiches. They gave me enough meat on my plate to make 3 heaping sandwiches, though I could only eat 2.
Besides I needed to save room for the delicious sides, First I had Hush-puppies which I was hesitant to try since I had a bad experience having them for the first time in Canada where they were re-heated from frozen and were not good at all, but here at Wink's they were tender and fresh, very enjoyable. I also tried for the very first time Fried Okra which I really really liked, they were not greasy at all and tons of flavour.
I love that Winks is still burning stick here which is getting to be almopst a lost art from the combination of new city by-laws and that it is very labour intensive and today's younger generation wants everything fast fast fast. But for this old boy I am a big fan of Low & Slow.
I did not get the chance to try the dessert selection but I hear they have a great banana pie.
