I’ve always been in awe of Billy Durney’s vision. He feels like he is always ten steps ahead of everyone else yet he is SO grounded in his lineage and history.
You can see it in the detail (and growth) of Hometown Bar-B-Que in Red Hook and you see it really shine in Red Hook Tavern. Red Hook Tavern of course isn’t a BBQ joint but it is one of the best hidden gems in New York. They have perfected the cheeseburger (it took them 8 months to come up with something that they love) and their Beef on Weck, Fish and Chips, Country Ham Croquettes are breathtaking. Heck everything is well thought out. Oh, and they have an INCREDIBLE wine and cocktail program. One of the best in New York.
