In this episode, I sat down with Amir Jalali who plans to open Redbird BBQ in Port Neches, Texas (Port Neches is about an hour and 15 minutes southeast of Houston) in the early part of 2023.

Amir talks about how he became part of the barbecue community while working at Feges BBQ Spring Branch and then spending the rest of his time (where he is currently) at Goldee’s Barbecue in Kennedale, Texas. He came on board at Goldee’s the weekend they received the top spot in the Texas Monthly Top 50 BBQ Joint list which came out in November of 2020. It was at this early stage that plans for his own brick and mortar in his hometown of Port Neches came to be.
